Putting the Kitchen of the Future to the Test

If you were given the chance to upgrade your existing cookline to brand new energy efficient equipment, would you? Energy efficient equipment might look good on paper, but how does it hold up in the tough environment of a real-world kitchen?


Werewolf American Pub, a local “upscale dive bar” said yes and we have the test results! Hear from the Werewolf American Pub, as a participant in a Kitchen of the Future cookline makeover, replacing their aging appliances with energy efficient appliances.


Fisher-Nickel, in partnership with SDG&E conducted the test and will share the stories behind the Werewolf cookline makeover as well as several other case studies in hotel, catering and institutional kitchens and offer practical tools for estimating savings and cost-justifying efficient equipment.


The results were positive and some of the lessons learned were surprising.

  • When it makes sense to change the cooking platform, including tools for estimating savings
  • The importance of training and penalties for poor operations


Speaker: Denis Livchak and Werewolf American Pub

Denis Livchak works as a Research Engineer for Pacific Gas and Electric Company's Food Service Technology Center. He started his career testing performance and energy consumption of commercial cooking appliances in the lab and in the field. Now he is focusing on commercial foodservice refrigeration equipment ranging from ice cream makers and refrigerated prep tables to walk in refrigeration and ice machines.
